Malaysia's favourite cake. Light and chiffony, this cake is made with pure coconut oil, coconut milk and pandan. Pandan is a plant that is commonly use in Asia and South-East Asia as a flavouring and for green colour. The cake is fragrant, and delicious.
Unlike normal chiffon cake this recipe is formulated to be extra tasty and soft. It is lighter than normal cakes.
It takes great baking skills to make this cake as it is extremely temperamental. It has a brown crust, and the cake has to rest upside down to cool to ensure it stays light and airy.
Pandan cake is normally served plain, ie, not iced. However, you can served it iced or with cream or ice-cream and fruits.
